Homemade Pizza Dough for a Thin Cracker Like Crust

What You'll Need

Equipment:
  • mixing bowl
  • measuring cups and spoons
  • 2 cup vessel to bloom yeast (a bowl or measuring cup)
  • marble board or clean surface for kneading
  • clean kitchen towels
  • knife or pastry scraper to divide dough
Ingredients:
  • 4 cups All Purpose Flour plus a bit for dusting
  • 1 package yeast, dissolved in 1 1/3 cups warm water
  • 2 Tablespoons olive oil
  • 1 1/2 teaspoon salt

This recipe for pizza dough works well for our Grilled Pizza recipe. This dough makes a thin, cracker-like crust, perfect for quickly cooking on the grill at a high temperature.

Makes enough for four 13" round pizzas.
The Dough: takes about 2 1/2 hours from start to finish; allow time for the dough to rise.

Directions:

1) Bloom the yeast

In your measuring cup, add the packet of yeast to the warm water and allow the yeast to float on the surface of the water for 2 minutes before stirring it gently in.

2) Mix your ingredients

In a mixing bowl, combine flour and salt. Make a well in the center of the flour. Pour the oil and the yeast/water combination into the flour, and mix together thoroughly with your hands or a spoon.

3) Knead and let rise

Turn the dough out onto a lightly floured surface (we use a marble board) and knead for 10 minutes. Cover with a damp cloth and let rise for 2 hours.
 

4) Divide and rest

When the dough has roughly doubled in size, divide it into 4 equal rounds and shape it into a ball; allow it to rest for an additional 2 minutes under the damp towel.
