These are all higher moisture cheese and the primary reason for this is that the surface growth produces enzymes that need to move to the center of the cheese for ripening results. The shorter the height the more efficient this can be done. The final step in cheese making is draining and forming a good shape and proper rind for the final cheese aging process. The most practical shape for cheese molds or cheese forms for cheese making is a cylinder. A cylinder cheese mold is most suited to sit on a flat shelf for aging or draining. When choosing a cheese mold for cheese making, there will be many other considerations such as, height, width, number of holes, etc., but that will depend on what type of cheese you are making.
